2017 Paradigm Shiraz Cabernet Sauvignon
VINTAGE CONDITIONS
The 2017 Paradigm Shiraz Cabernet Sauvignon is a long, cool vintage with even ripening allowing the fruit to be fresh. Tonnages were above average with solid and beautiful wines being produced in the Barossa Valley.
WINEMAKING
The fruit was picked early morning to retain cool berry temperature and varietal integrity. The fruit was then crushed into traditional 8T concrete open fermenters with heading down boards, then fermented on skins for seven to eight days to aid in colour extraction. Heading down boards keep the skins within the wine medium to maximise colour extraction. After ferment, the wine was pressed off skins to be transferred to barrel for 24 months oak maturation. After this period, wines were assessed for quality with the best parcels proceeding to blending.
TASTING NOTES
Colour: Purple to red with red edges.
Aroma: Dark plums and forest cherries. Elegant oak aromas supported by spice and cigar box notes.
Palate: The classic Australian blend of Shiraz and Cabernet Sauvignon has been passed down through our winemaking generations to provide continuous enjoyment. Dark plummy fruit flavours glide over the palate with some varietal complexity of cigar box and earthy notes supported by a supple and well-integrated tannin structure. This is a wine is made for immediate drinking but will continue to evolve in the short term.
