2018 Salute Shiraz Cabernet Sauvignon


VINTAGE CONDITIONS

Near perfect ripening conditions. Cool nights and warm days resulted in beautifully clean fruit with supple ripe skin and seed tannins. 2018 is regarded as one of the great red years in the Barossa valley.

WINEMAKING

The fruit was picked early morning to retain cool berry temperature and varietal integrity. The fruit was then crushed into traditional 8T concrete open fermenters with heading down boards, then fermented on skins for seven to eight days to aid in colour extraction. Heading down boards keep the skins within the wine medium to maximise colour extraction. After ferment, the wine was pressed off skins to be transferred to barrel for 24 months oak maturation. After this period, wines were assessed for quality with the best parcels proceeding to blending.

TASTING NOTES

  • Colour: Medium berry red with brick red hues.

  • Aroma: Mulberry and blackcurrant fruit notes melded with oak spice. Herbal and mint undertones add complexity and intrigue.

  • Palate: Berry fruit flavours continue through the palate with complex herbal, cigar, and earthy notes. The tannins are structured and well-integrated adding depth of character. This wine is offering excellent immediate drinking or could be cellared medium term to add further complexity.
